Today I am going to talk about a lovely lady who is super talented, has lots of passion for food and life and of course is gorgeous looking! She is well known in the culinary world and everyone who loves cupcakes in Dubai definitely knows her. She launched the popular Kitsch cupcake store, a homegrown concept, and is one of the first ones to start the cupcake craze in Dubai. Yes, I am talking about the lovely Dalia Dogmoch Soubra!

I have been inspired by her for a long time now. She is a successful entrepreneur and does everything with style. I love that she follows her heart and is always looking for inspiration and new challenges in her life. When I met her for the first time, late last year, she was looking to take another step in her career and write a cookbook. And now, the cookbook is out!! I went to the launch couple of days and was once again inspired by her. The cookbook looks as gorgeous as her and is full of yummy recipes which are not complicated to make. The recipes range from labneh omelettes to salty banoffee pies. I got a signed copy of her cookbook and look forward to trying out more of her recipes.

The first recipe I made from the book was French Crêpes with Sour Strawberries. The crêpes turned out just perfect..not too sweet which I like. They were silky, smooth and delicate. I like my crepes with slightly crispy edges so kept them on the pan for few seconds more. It was my first attempt at french crêpes and I wasn’t disappointed. In fact, thrilled to see the paper thin crepes coming out of the pan so beautifully. This recipe definitely goes into my cooking repertoire.

French Crêpes with Sour Strawberries

1 pack fresh strawberries, hulled, cut in small pieces
2 tbsp lemon juice
2 eggs
2 tbsp caster sugar
1 tsp salt
2 cups flour
3 cups milk
1/3 cup melted butter
Icing sugar to dust
1. Mix the strawberries with lemon and set aside. The original recipe doesn't call for sugar but I added 1 tsp of sugar to give some more depth to the strawberries but this is totally optional.
2. In a large bowl, combine the eggs sugar and salt. Add the flour and milk, then the butter abd whisk until smooth.
3. Heat a nonstick pan on medium heat. Add a small amount of butter to coat, then pour 1/4 cup of batter into the pan, swirling the pan to spread evenly.
4. Cook until the underside is golden, approx 30 sec, flip and continue cooking until golden. Continue cooking, laying the crepes out flat onto the plate, until the batter is finished.
5. Top with the berries along with their juices and a generous sprinkle of icing sugar.
