Papa Púrpura (Purple Potatoes), believed to have originated from South America, are referred to as the “Gem of the Andes”. Living up to their royal hue and lineage, purple potatoes have long been considered the food of gods — 7,000 years ago they were reserved for Incan kings in their native Peru. I’ve recently heard such wonderful things about purple potatoes, I knew I had to add them to my diet. Like most deep-hued produce, they are full of nutrients. They contain anthocyanins, which gives them their dark pigment. Anthocyanins are powerful antioxidants. Also in a new study, purple potatoes were found to lower blood pressure without adding unwanted pounds, due to the high levels of phytochemicals found in purple potatoes. What else…
