Pasta Alla Norma – Sicilian style Pasta

This great dish was introduced to us by one of our Italian friends who takes his pasta very seriously. His italian love for food was very much evident at the table as he also taught us how to eat spaghetti pasta..no spoons and knives pls, only a fork and 2-3 strands of spaghetti at a time for twirling. Pin It Pasta alla Norma is a typical Sicilian dish, using eggplants, sweet and ripe tomatoes, ricotta salata, fresh basil, olive oil and maccheroni pasta. The original recipe calls for maccheroni pasta and that the eggplants should be fried. However, I am using spaghetti as it is handy most of the times and also more satisfying. Also, I am roasting the eggplants to make it a little more healthy option for everyday cooking.…
